Eat Korean to Fight Cancer


Cancer is Korea's biggest killer, responsible for 25 percent of deaths. Its causes are still not fully known, its treatment too often remains a stab in the dark, but it is clear that a diet rich in kimchi and other traditional Korean dishes can be highly effective in preventing cancer.



◆ Rice and Black Beans

An article recently published in a respected cancer journal showed that rice-bran and embryo buds of rice contain substances that can prevent cancer. For a better intake of rice-bran and embryo buds, eat unpolished rice rather than polished rice that is hulled several times. Unmilled rice has 12 times more fiber and three to four times more vitamins than polished rice. Black beans are rich in estrogen, which make them effective in preventing breast cancer. Black beans are anti-oxidants, so unpolished rice cooked with black beans provides quality nutrition as the two supplement each other's deficiencies.


◆ Kimchi

Until a few years ago, kimchi was regarded as a possible cause of gastric cancer or stroke because of its spices and salt. But the substance that makes the powdered pepper hot is not carcinogenic, and even the carcinogenic substances in Chinese cabbage, such as nitrate and nitrite, are extremely small in quantity and usually destroyed during fermentation. The major ingredients in kimchi, meanwhile, are mostly cancer-preventing vegetables -- garlic, ginger, green onion, and radish -- while the lactobacilli produced during fermentation are effective for the prevention of colon cancer.


◆ Garlic

Garlic was included in the top 10 healthy foods named by the U.S. weekly Time in 2002 and at the top of the 48 foods with anti-cancer effects listed by the U.S. National Cancer Institute. Garlic reduces cholesterol by controlling the enzyme that synthesizes cholesterol in our body and clears the blood. It also is effective in enhancing immunity while controlling proliferation of cancer cells. The alicin in garlic is particularly effective in controlling an increase in bacteria and was used as an antibiotic during World War I and II.


◆ Chili Peppers

While chili peppers are the signature spice in many Korean dishes, they were once regarded as a major cause of chronic gastritis. But a moderate intake of chilies cannot harm the gastric mucous membrane. Instead, research shows that the capsaicin in chilies, which makes them so spicy, regulates the growth of helicobacter pylori and as a result prevents gastric cancer. Other studies published recently show the efficacy of capsaicin in anti-oxidization and inflammation control. That the relationship between capsaicin intake and the frequency of gastric cancer is significant is evident in the fact that the disease is relatively rare in Latin American countries like Mexico, where large quantities of chili peppers are consumed.


◆ Bean Paste

Bean paste is acknowledged as a key "longevity" food. The anti-cancer effect of the major ingredient -- beans -- added to various beneficial substances produced in the process of fermentation makes bean paste highly-effective in preventing cancer. Some 40 percent of a bean is protein, which, when fermented, produces amino acids. They in turn play an important role in preventing cancer. The vegetable estrogen produced in the process of fermentation is also effective in preventing osteoporosis in women and various symptoms of menopause as well as various types of cancer.

Salty Diet Increases Risk of Stomach Cancer


                                          
Salty food may increase the likelihood of stomach cancer, a comprehensive study suggests. A team led by Dr. Kim Jeong-seon at the National Cancer Center Research Institute analyzed dietary habits of 2,248,129 people and their families aged between 30 and 80, using 1996-1997 survey data by the National Health Insurance Corporation.


They divided the group into those who normally eat salty food and those who do not, and tracked whether they had stomach cancer or not by 2003. The group that liked salt was 10 percent more likely to have stomach cancer.

Previous studies have merely shown an association between dietary habits and stomach cancer based on self-reported retrospective questionnaires, but the new study confirms that this is actually what is happening.

"Salty food damages gastric mucosa," Kim said. "We assume that the risk of stomach cancer increases when carcinogens come into the damaged stomach." However, the study does not explain the exact relationship. But the fact that stomach cancer is more common in coastal regions and that refrigerators reduced the need for salt-pickled food enabled the researchers to formulate the hypothesis. An experiment on animals suggested that the intake of extremely salty food or injection of high-density salt water leads to damage to the gastric mucosa and atrophic gastritis.

"This study offers some explanations for the world-leading rate of stomach cancer among Koreans," Kim said.

[National Treasure No. 343] Land of the mountain gods

Excavated at a temple in Gyuam Village, in the city of Buyeo, South Chungcheong, this tile has eight different patterns inscribed on its surface. These include mountaintops, trees, streams, clouds and lotus flowers.

The scene on the face of the tile is a landscape. In between the mountaintops stands a tile-roofed house. Seated on the rock to the right of the house is a man who looks like a mountain god.

The three-dimensional design of the landscape adopted the technique of perspective, which is peculiar to the period.

The tile also contains both Buddhist and Taoist elements, reflecting the advanced cultural standards of the Baekje Dynasty (18 B.C.-660). It is considered to be a meaningful artifact that offers a glimpse into the ancient dynasty’s artistic techniques.

[Tales of Happy World] A Beautiful Farewell


It was a very cold winter.

On this day, my grandmother was going home after spending several months in the hospital.
My father could not hide his sorrow.
Because the doctor told him that my grandmother would probably not make it through the winter.

"Mother, hold on a bit."

"Aren’t you glad to be going home?"

Grandmother became weaker every day.
And as if she knew what the doctor had said, she held my father’s hand and spoke.

"I don’t think I’ll make it through the winter."

"Mother, why do you say such things?"

And every time she said that, my father would silently cry. We all did. However, my grandmother Miraculously made it through the winter. Although we lost her in early summer, we had 6 more months than was expected.

Every day of those six months was winter for my grandmother. Even though winter passed and it was spring, we changed into winter clothes every time we entered her room. There were even times we wore our gloves and scarves.

Afraid we would lose her if she knew winter had passed, the whole family kept the secret. Our whole family earned 6 extra precious months to prepare her for the longest journey of her life.

That summer, my mother full of sadness, cried as she put away all our winter clothes.

[Korean Traditional Food] Bulgogi(불고기)

Main Ingredients :
(Serves 2)
200 g beef, 1/4 onion (about 30 g), 15 g green onion, 20 g carrot, two brown oak mushrooms

Spices :
2 tbsp soy sauce, 1 tbsp refined rice wine, 1 tsp sugar, 1 tsp minced garlic, 1 tbsp pineapple juice, 1 tbsp pear juice, 1 tbsp sesame oil, 1/4 tsp ground pepper, 5 tbsp water

Food Story
Bulgogi is a favorite dish among foreigners visiting Korea. Bulgogi literally means “to barbeque beef directly on fire.” The main ingredient beef is marinated with the seasoning sauce based on soy sauce. The juice from the cooked beef and vegetables is enjoyed as well.

In the past when the dietary culture in Korea mainly centered on dishes made with cooked vegetables, bulgogi was the most appetizing specialty cooked mostly on particular occasions or when having guests. That’s why Koreans tend to serve bulgogi for foreigners, a custom derived from that native traditional culture.

 Direction

1. Cut beef into 1 mm-thick slices and clean off the blood with kitchen towel.

2. Soak brown oak mushrooms in water and remove the stems and cut them into several slices.

3.Peel the onion and carrot and cut onion along the grain while carrot is cut into rounds or dominos. Green onion is cut diagonally.

 4. Prepare the seasoning sauce by mixing the ingredients.
5. Add the seasoning sauce to all the ingredients and mix it well.  
6. Cook the well-mixed ingredients in the heated frying pan and place on a plate when done.

Tip
☑The proportion of beef to soy sauce is the key point in making bulgogi’s seasoning sauce. One tablespoon of soy sauce is needed for marinating 100 grams of beef.
☑If can’t get hold of brown oak mushroom, use button mushrooms or other mushrooms with mild flavor.
☑Pineapple or pear juice is used to soften beef. Ground kiwi can be also used but do not add too much.
☑Heat control is very important when cooking beef. First cook in high heat and when the beef is slightly cooked, lower the heat to medium high and cook a little more. Keep in mind that beef cooked too long will become tough.


S.Korean Climber Becomes First Woman to Scale 14 Peaks


South Korean female mountaineer Oh Eun-sun successfully ascended to the top of Annapurna in the Himalayas Tuesday, becoming the first woman to conquer all of the world's 14 highest peaks.


Oh reached the summit of the eight-thousand-91-meter tall Annapurna, the ten...th highest mountain in the world, without oxygen at 6:16 p.m. Tuesday (KST). Her arrival to the peak was 13 hours 16 minutes after she left the last camp.

The 44-year-old climber is the only woman to succeed in scaling all of the world's 14 highest mountains that exceed eight-thousand meters.

Oh is the 20th person to achieve the feat since Reinhold Messner of Italy, who conquered the 14 peaks in 1986. She is also the fourth Korean to scale the 14 highest peaks.

[Tales of Happy World] The Race

In a prison there was a sports competition for inmates. It was for inmates who had been there for over 20 years. Their family members were also invited.

"I would like this event to go on without incident."

It was a very special event for both the inmates who had not lived with their families and for the ...families who had suffered.

Each of the final competitions was led with energetic cheering. Everyone was so excited and energetic, one would think they were elementary schoolers.

"Honey, you can do it…"

"Good job, son! Go!"

The highlight of the day was the race in which the inmates carried a parent on their back around the tracks. However, as the participants began gathering at the start line, the atmosphere became quiet and solemn. As the inmates offered their backs to their parents, the signal to start was given.

But no one took off.

A mother, unable to wipe away her tears wiped the tears from her son’s eyes…
A father, unable to get on his tired son’s back…
The racetrack became an ocean of tears.

A race without a first or second place winner.
A race in which the participants tried to linger on the tracks.



It was a strange race…
It was a race so moving, words can not describe it.
It wasn’t a race for first place.

But rather a race to spend just one more second with a parent.

A desire is a need gone crazy.

Needs are very few and a man who understands what is needful will always be happy and blissful...A desire is a need gone crazy. It is impossible to fulfill it. The more you try to fulfill it, the more it goes on asking, asking,asking.



There is a sufi story that when Alexander died and he reached heaven, he was carrying all his weight– his whole kingdom, gold, diamonds – of course not in reality, but in an idea. Ideas have as much weight; in fact an idea is the real weight. He was burdened too much by being Alexander.The gatekeeper started laughing and he said ’Why are you carrying so much of a burden?’Alexander said ’What burden?’ because really he was carrying nothing. Everything was in the head, but the head was very heavy.The gatekeeper gave him a scale and put an eye on one side of the scale. He told Alexander to put all his weight, all his greatness, treasures, kingdom, on the other side of the scale. Alexander put all his kingdom, all his wealth, his victories, and everything there. That one eye still remained heavier than all his kingdom, so finding no other way, he himself jumped onto the scales, but still the one eye remained heavier. He said to the gatekeeper, ’I cannot understand how such a small eye can be so weighty. What is it? Are you playing some trick, some magic with me?’The gatekeeper said, ’This is a human eye. It represents human desire... the outgoing desire.’’It cannot be fulfilled, howsoever great the kingdom and howsoever great your efforts. Even a single human eye full of desires cannot be fulfilled.’Then Alexander said ’Then what is the way to fulfill it?’The gatekeeper threw a little dust into the eye. The eye immediately blinked and lost all its weight. It was immediately weightless.

The story is beautiful. A little dust of understanding has to be thrown into the eye of desire. The desire disappears and only needs remain, and they are not weighty. Needs are very few... needs are beautiful. Desires...make monsters of men. They create mad people.Once you start learning how to choose the peaceful, a small room is enough; a small quantity of food is enough; a few clothes are enough; one lover, a very ordinary man (or woman), can be enough of a lover.But if you go on asking for more and more, then thousands of men (or woman) are not enough. Even the most beautiful man (or woman) is finished sooner or later. Your desire goes on and on. It knows no end... it stops nowhere.
